Lime & Mint Mojito Sorbet Recipe

Serves 6


⁃ 350g Unrefined Cane or Demerara Sugartess cooking
⁃ 10 Limes (at least 5 unwaxed)
⁃ 4 Lemons
⁃ A small handful mint


1. Put 250g sugar into a pan with 400ml hot water and place over the hob. Stir the mixture until the sugar has dissolved and the mixture has slightly thickened, then set aside and allow to cool completely.

2. Finely chop the mint leaves. Zest the unwaxed limes, then juice all the limes and strain through a sieve. Add the mint and stir in the rest of the sugar to dissolve.

3. Chill in the fridge for a couple of hours.

3. Put in an ice cream maker and churn according to instructions. Alternatively pour into a large Tupperware box and put in the coldest part of the freezer. Beat vigorously with a fork every half hour to ensure even freezing until the mixture has set. Then put it back in the freezer and freeze for at least another hour.

4. Remove the sorbet from the freezer and keep at room temperature for 10 minutes to soften before serving.
