Cheat’s Layered Pavlova Recipe

When we Brits do finally get to see some sun, we really want to make it count don’t we? At the first sniff of good weather, we can all be found rushing out to buy sausages and steaks ready for a a spot of barbequing. It’s one of my favourite parts of summer; making the most of the long evenings, eating al fresco and sharing delicious food with friends. This layered pavlova dessert is perfect for impromptu get-togethers as it’s super easy to whip up in just a few minutes.

What better way to end a meal than with this show stopper?

You will need:cheats-pavlova-ingredients small

600ml Double Cream

3 Tablespoons of Icing Sugar

1 Bottle (or pack) of Raspberry or Mixed Berry Coulis

2 x Ready Made Pavlova Shells (try and buy the poshest ones you can find, you can really tell the difference!)

1 Punnet Strawberries

1 Punnet Raspberries (I used frozen ones that had been allowed to defrost at room temperature)

What to do:

  1. Whisk the cream with the icing sugar until it make soft, floppy peaks. It should be spoonable and “dollopable” but not too stiff.
  2. Pop half of your raspberries in a bowl and gentle mash them with 4 tablespoons of your coulis.
  3. Spoon half of this raspberry/coulis mixture into your cream and fold in, not quite mixing it, so it has a raspberry ripple effect.
  4. Now put one of your pavlova shells onto a pretty plate, spoon on half of the cream mixture, top with half of the remaining raspberries and half of the strawberries.
  5. Drizzle over half of the raspberry/coulis mixture that’s left.
  6. Add the second pavlova shell on top and pile on more cream and the remaining fruit. I like to arrange it so that the fruit sits in a pile in the middle.
  7. Add the final drizzle of raspberry/coulis.

This is best eaten as soon as possible after you construct it, as the meringue shells will become soft from the cream after a few hours.
