It’s Pimms O’Clock – Ice lolly recipe

Finally, the sun is shining and summer is here – hurrah! For me, every season has a taste, elderflower cordial in spring, pumpkin soup in the autumn and flaky, rich mince pies (of course) in winter. I can never quite decide on my taste of summer though. Barbequed sausages, slightly blacker than they should be (my lovely husband’s trademark barbeque habit!), or perhaps delicious and refreshing creamy ice cream on a hot day.

I know for lots of people though, it’s all about a glass of Pimms on a summer evening. It’s never quite done it for me, I have to say. A little too sweet. So, what better way to serve it than turning it into an ice pop! A super easy, light and delicious summer dessert.

You can buy silicone ice pop moulds fairly cheaply online and they are great for making these grown up treats or for making refreshing juice lollies for the children. If you already have ice lolly moulds these are absolutely fine too. You may need to double the mixture as they generally hold more liquid.

When making these, an extra pair of hands is useful to hold the moulds as you fill them. You may need to stand them up in a mug before putting them in the freezer to keep them upright.

When they are frozen and you’re ready to serve them, run them under a warm tap to loosen them from their mould.

 Pimms Ice Pops recipe

(Makes about 6)


100ml Pimms No 1

300ml Flat lemonade (leave in a cup in the fridge overnight)

Juice of half a lemon

Mint Sprigs

½ Cucumber

1 Orange, peeled and cut into sections

Handful of strawberries, hulled and sliced


  1. Mix your Pimms, flat lemonade and juice of lemon.
  2. Pop a sprig of mint and a little of the cucumber and fruit into each of the ice pop or lolly holders.
  3. Top up with the liquid and freeze overnight.
  4. Enjoy!
