3 Ingredient Chocolate Mousse Recipe

It’s funny how celebrations change so much as you get older, isn’t it? Perhaps it’s having a family, or just a million other priorities. But where I once dreamed of a magically romantic Valentine’s day, where my knight in shining armour would sweep me off my feet, my wishes these days are a bit more, how shall we say, down to earth?

I found that knight in shining armour (love him) but he’s not the most romantic. Which is lucky as do you know what I’d like for Valentine’s day? An evening in, with my love, a film, a log fire, a glass of wine and something yummy to eat (whilst wearing my slippers). The high life? No, but when all you really want is a rest and a bit of time together – perfect.

Whether you’ve found Prince Charming, or you’re still kissing a few frogs, chocolate makes every occasion better, so here is my totally chocolatey mousse. Perfect to enjoy on your Valentine’s evening in. Easy to make in advance, just enough for two and utterly decadent.


100g Dark chocolate, chopped into small pieces

50g Mini Marshmallows

250ml Double cream


  1. Put the chocolate, marshmallows and HALF of the cream into a small bowl over a saucepan of boiling water. Keep the temperature low.
  2. Stir occasionally until everything is smooth and melted, this might take up to 10 minutes. Be patient and keep the temperature low so nothing burns.
  3. Remove from the heat and allow to cool for 5 minutes.
  4. Meanwhile, whip the rest of the cream until it is forming soft peaks.
  5. Fold the cooled chocolate mixture into the cream until it is totally combined and smooth.
  6. Pour into two ramekins and allow to set for 2 hours.
  7. Serve with berries.
